Quesos Mirois A Spanish family-run concern situated in the heart of La Mancha – Don Quixote’s country – in the province of Cuenca, in the village of San Clemente, Quesos Miro have been making cheeses for over 20 years.
They make cheese as traditional and world famous as cottage Manchego cheese, under protected DO control.
Cheeses that mature in the traditional way:
- Cheesees in lard and brandy - Cheesees in rosemary; and in extra virgin olive oil too. Cheeses as soft and intensely-flavoured as, for example, the soft and semi-hard sheep’s cheeses, and other varieties.
